Capture the full flavor of the wonderful herbs you've been tending all summer in herbal vinegars that will last all winter long. Learn vinegar's chemistry and history. Sample a variety of herbal vinegars from around the world. Pair herbs with vinegar to create unique flavorings to enhance everything from appetizers to desserts, French food to Asian cuisine.
Think: Lavender balsamic vinegar drizzled over grilled pineapple. Think: Nasturtium rice vinegar in a marinade for pork and other meats. Think: Fennel seed, frond and pollen vinegar in a dressing for cold fish and seafood.
During this course, you will make three 8-ounce bottles of herbal vinegar using your own herbs or from the Duke Farms Community Garden. You provide 3 empty 8-ounce bottles and we will provide your choice of vinegar - white wine, red wine, apple cider, balsamic, and rice, plus spices and flavorings. (Full instructions on what to bring will be sent in midsummer.) We'll even include raffia and labels in case you want to gift one of these, but you won't.
This workshop will be led by Lesley Parness, garden lecturer and former Superintendent of Horticultural Education at New Jersey's Morris County Park Commission.
